Created by BEAM with Eating with the Ecosystem, it brings together fishers, chefs, scientists, artists, and food-system advocates to ask a deceptively simple question: why does so much local seafood leave the region?
Through stories, diagrams, illustrations, and recipes, Eating the Whole Fish offers a cultural guide to eating more fully (and more deliciously!) with the ecosystem around us.
